This weekend I made TWO recipes from Pinterest. With all the stuff I pin and never actually try out, I felt pretty proud of myself. The first recipe probably shouldn’t even count because it was SO easy. Mix a boxed brownie mix, yogurt, and cool whip together and you get Brownie Dip. Is that even a recipe? I guess I will let it count since it was so delicious. Chocolaty goodness. Sadly I forgot to pick up vanilla wafers for dunking, but we had a few chocolate graham’s. I was fine eating it by itself. It reminded me of chocolate pudding or mousse. The spoonful’s went down easily.
The next recipe took slightly more effort, but it was still pretty simple. I know I mentioned yesterday we had a casual Super Bowl Sunday, but we are of course going to make sure some good football dips are available for eating. Well, I made sure. I made Jalapeno Corn Dip. It was good! Nothing too crazy, just your typical cheesy dip with a spicy kick.
Definitely need to put my recipe boards to use more often.

How was everyone’s weekend? Did anyone go to any great Super Bowl parties? My weekend was pretty fabulous. I didn’t have to work any weddings or events which is always nice. I got to spend pretty much the entire weekend with Sean which doesn’t happen that often so that was great too! We enjoyed the weather (well, Sean got very burned…which you wouldn’t think would happen in 60 degree weather!), I cheered him on in The Warrior Dash, and we spent 2 lazy nights at the house.
Only a little dirty, right? I tried to keep my distance. Him and his friends had a lot fun, but it took them quite a while to finish. He said there were a few obstacles they had to wait in a long line for to complete. If I was running this race that would have definitely frustrated me. I was happy I didn’t partake in the muddiness. I raced in one back in August and I guess not enough time has passed for me to be ready to do another .
The Super Bowl in this house was very low key. My mom and I just threw a few things together. Obviously, my favorite part of the game was Beyonce’s performance. She is SUCH a good performer. I got so excited when Destiny’s Child came on stage!!! I ❤ Beyonce.
I guess I had more thoughts today than most Monday’s. Let’s make it a good week, shall we?

Happy hump day & work it out Wednesday. I am happily welcoming this hump day because my 16 hour work day is behind me—WOO HOO! I am beyond exhausted and my legs/feet hurt like nobody’s business, but I did it and it’s done. Halleluiah!
I just want to talk about working out and the weather today. For me, the weather is a huge motivator to work out. In particular, go for a run. When it is low 70s and sunny I actually get excited to go outside and go for a run, which is very strange for me. And on days when I have to work and it’s so beautiful outside and I can’t go out for a run, I actually find myself wishing I could.
I know I complain a lot about the weather here in Orlando, (“why am I wearing shorts in January?”, “My boots aren’t getting enough wear!”), but this weekend was just lovely and I had the best run. I felt fast for me and I chose to go a little longer instead of doing the usual loop I have been running lately and I only have the weather to thank…and maybe the fact that I hadn’t ran in a while. I ran 5.5 miles in about 48 minutes.I used my RunKeeper app to keep track of my milage, I know I mentioned before I have had accuracy issues with the app, but I think this was pretty accurate. The rest of my work outs this week have been fine (I actually still need to get one in today, I’m going to need extra motivation!), but nothing compares to having a great run outside. I am fortunate to fit a lot of those in here in Orlando and I won’t complain about that
Does weather motivate you to get in a good work out session?
Even though I had to work this weekend and I didn’t get to see my boyfriend, it was still a great weekend. Friday night I caught up on Real Housewives of Beverly Hills (those ladies are crazy) and called it an early night which I desperately needed. Saturday was a great day. It was pretty much everything I could want in a weekend. I had a lazy morning, went for an awesome run, did a few chores, went shopping, then attended the Luke Bryan concert at the Amway Center! That is pretty much a perfect day in my book.
Oh, and the weather was peeeerfect.
Luke Bryan was such a good show. He was so fun and entertaining, he even pulled up people from the crowd onto the stage. And I guess he’s kinda cute too My sister and I had a blast.
Thompson Square and Florida Georgia Line opened for him, but Kristin’s friend who works at the Amway Center informed us Luke wouldn’t be on until much later, so we decided to show up to the concert just in time to see him. From those around us we heard that Thompson Square and Florida Georgia Line put on great performances too. The Amway Center is a HUGE venue, probably one of the largest in the US and it always amazes me when it sells out. How amazing must that feel for the performer? Just looking around at the huge crowds of fans in cowboy hats and boots was entertaining in itself. Country concerts are so fun—I can’t wait until my next one!
If you could describe your ideal weekend, what would it be?
Good morning! Who else is dragging this morning? I feel like I’m going to need lots of coffee today. This week is going to be a crazy one for me at work…we have a big event happening tomorrow and I believe a 16 hour work day is in my near future. Yes, much coffee will be needed indeed. At least The Bachelor is on tonight? I felt kind of bad for Kacie B last week, but at the same time she made absolutely NO sense when she brought up other girls to Sean. COME ON! She should know that is a huge no-no. Who else has been watching? Do you have any favorites yet? I loved the date at six flags (I can’t remember her name, but she is becoming a favorite) I also like Selma. Definitely not into Tierra, my feelings could change after tonight’s episode though, we will see. Let me know your thoughts!

My sister made this recipe this past weekend, it was an old one my mom had saved from a newspaper. It was so delicious and she threw it together so quickly, I needed to share. Chocolate + coconut + powdered sugar + cream cheese…yeah, what’s not to love? Throw some vanilla ice cream into the mix and it’s even better. WARNING: it doesn’t look “pretty” hence the name earthquake.
1 cup nuts
1 cup coconut
1 German chocolate cake mix
1 lb. powdered sugar
1 stick butter
1 8 oz. package cream cheese at room temp
1 tsp vanilla
Spread nuts and coconut on bottom of a 9×13 greased cake pan. Mix cake according to directions and pour over bottom layer. Mix icing ingredients completely and poor over batter. Bake at 350 degreed for 45 minutes.
Thanks to Sean’s parents and my sister, Sean and I spent the weekend at Disney! Sean’s parents got a trip for us and my sister just happened to have Disney passes. Win-win. We stayed at the French Quarter Resort and spent Sunday at Magic Kingdom. We had a great time, but I think we were both over the lines and swarms of people. I know Disney is probably always crazy, but I think the holiday weekend made it even worse. We also spent some time at Downtown Disney with some friends and ate dinner at Cat Cora’s restaurant at Disney’s “Boardwalk.” It was so delicious.
We also ate lunch at the new restaurant in Magic Kingdom, Be Our Guest. The food was so-so, but I loved being in the restaurant. Beauty and the Beast was probably my favorite Disney movie growing up and I love the dinner scene in the big dining room in Beat’s Castle, I felt like I was there– so cool!
Last night when I got back home I was greeted with a pomegranate martini made by my dad and a delicious meal equipped with appetizers and dessert prepared by my mom. They went all out since my aunt and uncle are in town and I’m happy I got to join in on some of the fun. Today is back to reality: work, exercise, and attempting to eat healthy. Who is with me?

Good morning and happy Friday!
Everyone at work has been hacking away and staying home sick lately. So yesterday when I was feeling exhausted all day I knew I should get to sleep early so I did just that. I drank tea and read some of my new reading material and called it an early night. Well, an earlier night than usual. I get so excited when I go to bed really early, is that strange?
I’m always happy when Friday comes around, but this week has actually been a great week for several reasons. I’m going to try to make a point to enjoy the little things throughout the work week instead of always longing for free time on the weekends.
Here are the little things I enjoyed this week:
1. I finally got a pedicure that I’ve been meaning to get for about 8 months now. I need to partake in this luxury more often. I can’t help but smile when I see my smooth professionally manicured feet.
2. I baked blondies which made some work friends happy.
3. Attended a Magic game with my sister…and we won!
4. Made 2 trips to Starbuck’s and paid for my drinks with a gift card.
5. Stocked up on work snacks.
6. A cold front is coming through!
7. Anticipating a weekend away with Sean! It’s only about 30 minutes away from my house, but supposedly it’s a really magical place so I’m pumped to spend the weekend there!
What have been the highlights of your week?
Work it out Wednesday has been missing the past few weeks. Thankfully, my work outs have not! I’m trying to bring back some more variety and intensity to my workouts (as silly as that sounds). I feel like after I completed my half marathon I was kind of, “eh” about my work outs. I still did them, but never finished feeling great so I’m trying to bring that back!
This Monday I worked out with my Nike Training Club App. My sister introduced me to it and I really like it! It has 3 different categories: GET LEAN, GET TONED, and GET STRONG. It then breaks down into subcategories: beginner, intermediate, and advanced. Once you have selected that it brings up a list of work outs to select ranging from about 15-45 minutes. Once you start the work out it speaks to you and tells you what exercise to complete and when the 30 seconds is up of lunges or whatever it may be, it tells you to move on to squats. The app also includes videos on how to do the exercises in case they are new to you.
Monday I did 30 minutes from the beginner GET TONED section and my legs are sooooore! I really like the app. It has great variety of tough workouts.
The other two apps I occasionally use related to fitness are RunKepper and My Fitness Pal. RunKeeper is awesome because it tracks your distance and pace without having to buy a an expensive Garmin, and you can listen to your music and everything. I’ve had a few mishaps with the GPS when it had me running 5 minute miles. UH, yeah right! That hasn’t happened often though. The only reason I don’t use it on every run is because I get nervous having my phone with me. I need to invest in an armband.
My Fitness Pal tracks your calories, given you input all the food you consume. I like using this when I feel like it’s time to be strict and eat healthy, but that usually only lasts a few days. It’s easy to get lazy with this app since you have to input everything for it to be accurate. If you think I’m entering every almond you’re crazy.
I think all of these apps were introduced to me by others. I’m kinda out of the app loop and the loop in general. That is what Kristin is for.
So tell me, what fitness apps am I missing out on?!
Can I just complain for a minute about how there is not enough time in the day? I never really understood when people said that, but now I can relate more than ever…and I am sure one day when I have more/bigger responsibilities I’ll laugh at how ridiculous I sound right now. At least I can admit that, right? Sure! Basically I just want more time in the day to watch TV shows I like (it’s stressing me out how behind on Revenge and Real Housewives of Beverley Hills I am), read magazines/books/blogs, pin, etc., but who the heck doesn’t?
This weekend I did have time to get together with my old roomie! We were roommates in our sorority house, Kappa Delta, for our junior and senior years of college. It was so great to see her and made me really miss the days we used to hang out and laugh every single day. She is off working hard in law school now and I am so proud of her! I was always impressed by her dedication to school and her study habits throughout college. I was studious too, but Paige was on another level . Can’t wait until we are reunited again!
We met by UCF, which isn’t far from where I am now, but I haven’t been on that side of town much since I graduated. I felt so nostalgic being in that area and my college days came right back to me. It was my second home for 4 years and although I really haven’t been gone that long yet, I really miss! And all the friends that surrounded the area. Growing up is tough.
