Mindless Monday

Helloooo Monday morning! Is everyone ready for a great week? With lots of coffee I will be Winking smile. Here are some scenes from the past few weekends.

With my sister’s move we were down to ONE TV in my house. Needless to say I have been overruled many Monday night’s and am sad to say I have missed a lot of The Bachelor. Luckily, we have a new TV in the house and I am definitely tuning in tonight for the women tell all episode. Those episodes are always entertaining, and now I can catch up on all the juicy stuff I missed out on.

By the way, I updated the Let’s Work Out page with my work out plan for the week, check it out and let me know what your plan is. I need some new ideas!


It’s March?

Seriously, where did February go? Every time I look at my March schedule I have a small panic attack. It’s always way worse when you think about everything that needs to be done and constantly look ahead at your schedule, wouldn’t you agree? At least that is what I have been telling myself. This month I am going to do my best to take it one day at a time and enjoy the moment, no matter how tired I may be!

It’s Friday and my sister is coming home for the weekend. Yippie!

Fluffernutter Chocolate Cake

Last week I had some extra time on my hands and actually contributed a bit in the kitchen! I really do enjoy cooking and baking, but with working late nights and living at home it really doesn’t happen all that often. I’m so lucky my mom cooks a meal pretty much every night. She is the best.

I made banana bread, buffalo turkey burgers, and fluffernutter cake last week. The fluffernutter cake was probably the shining star. It was my dad’s birthday and he (like me) loves peanut butter and when I came across this recipe on Pinterest I knew it was right up his alley. Peanut butter + fluff + chocolate…what more could you want? It was a really rich and dense cake. Maybe that has to do with the fact that it has 2 icings and a lot of butter in every layer? Definitely a recipe I will be repeating.

Fluffernutter Chocolate Cake

6 squares Baker’s semi sweet chocolate

3/4 cup butter

1 1/2 cups sugar

3 eggs

2 tsp. vanilla

2 1/2 cups flour

1 tsp. baking soda

1/4 tsp. salt

1 1/2 cups water

1. Preheat oven 350 degrees. Microwave chocolate and butter in large microwaveable bowl on high for 2 minutes. Stir until chocolate is completely melted. Stir in sugar. Add eggs, 1 at a time, beating with an electric mixer on low speed after each addition until well blended. Add vanilla; mix well.

2. Add 1/2 cup flour, baking soda and salt; beat well. Add remaining 2 cups flour alternately with water. beating until well blended after each addition. Pour evenly into 2 greased and floured 9 inch round cake pans or 13×9 pan.

3.  Bake 35 minutes or until tooth pick inserted in center comes out clean. Cool 20 minutes before icing.

4. Spread peanut butter icing over cake, then scoop marshmallow butter cream on top, using a knife or spoon to swirl into peanut butter frosting.

Fluffy Peanut Butter Icing 

1 stick of unsalted butter at room temp

1 1/4 cup creamy peanut butter

1/2 cup powdered sugar

1. Mix the 3 ingredients until smooth consistency.

Marshmallow Buttercream

1 1/2 stick of butter softened

7 ounces marshmallow fluff

1 1/2 cups powdered sugar

1 tsp vanilla extract

1. Cream butter on high speed until light and fluffy, add fluff and combine on high speed until smooth.

2. Add sugar and mix on low speed until combined then increase speed to high until light and fluffy.

3. Mix in vanilla on high speed until combined.

Eat, enjoy, and don’t think about all the calories that are going into your body Winking smile.

WIOW- Spinning

I think my sister first introduced me to spin class during my first semester at UCF. Since then, I went to spinning classes on a pretty regular basis throughout college. I LOVED the feeling I got after a spin class. I always felt like I had the best work out and was so energized. Most of all it was fun and fast paced.

Since I’ve graduated I no longer have access to the UCF gym (best gym in the world). I miss it sooo much. Anyway, I haven’t participated in a spin class since, and yesterday morning I tried out the class at the gym I currently belong to. It felt good to switch up my routine and force myself to try something new, but it just made me miss spinning at UCF. There were only a few people in the class and the instructor just wasn’t as fun or encouraging. Womp, womp. I’ll definitely give it a go again and maybe try a new instructor next time.

I like group classes, but I don’t usually partake in them. I’m just way more comfortable doing my own thing. Although, it does feel great to get out of my comfort zone and add variety to my work out that I wouldn’t think of on my own.

Do you prefer group exercise or going solo?


It’s my dad’s birthday today and a healthy dinner of Baked Ziti and Fluffernutter Chocolate Cake is waiting for me. Yes, Fluffernutter Chocolate Cake. I found the recipe on Pinterest and my mom and I slaved away in the kitchen Monday night. Now, all we have to do is ice that baby up and eat it. Peanut butter and fluff is probably my favorite combo ever. I’m so excited! I’ll share the recipe soon.

Colorado Fondue Company

Sean and I decided to celebrate Valentine’s day on Friday since it was much more convenient for the two of us. We had the best time at The Colorado Fondue Company. Fondue is so fun to eat and it is definitely a good date night choice in my book. We have been to The Melting Pot once before, but I think I may have liked this place a bit better.

It was such a cute and homey place, I felt like I was in a log cabin. They have very reasonable priced options, too! I think I remember seeing $14.00 for a cheese and dessert fondue combo. Our server sold us on the Valentine’s day special and it was heavenly. My stomach hurt the rest of the night, but it was so worth it.

Annnnd now my mouth is watering all over again.

Movie vs Book

Last week was pretty crazy at work. Home late each night and a lot of events! Blogging had to take a back seat for the week. I focused on getting to sleep early and squeezing in some work outs OH and enjoying a few Valentine’s day treats Winking smile.  It was a good week, but I’m more than happy to welcome this event-free week.

No plans this weekend except to hang out with my boyfriend was the perfect way to recuperate.  We ate a few delicious meals, saw Safe Haven, and were a couple of lazy bums.

Since I saw Zero Dark Thirty with Sean, it was his turn to see Safe Haven with me. I really enjoyed the movie! After reading the book, I was excited to see how it would play out on the screen. Of course it wasn’t as good as the book, but for the most part it really did a good job capturing the visions I had while reading. If I can, I ALWAYS read the book before seeing the movie. To me, it’s so much more exciting to see what you envisioned come to life. I loved Julianne as Katie.


I finished the weekend off with church, errands, and getting ready for the week ahead. And enjoyed some homemade pizza and wine.

Mindless Monday

Did anyone watch The Grammy’s last night? To me, they are probably the most entertaining awards show. So many great performances. And of course, lots of dresses to admire. I watched a little bit before calling it an early night.

My weekend was great, but felt too short. I got to visit my sister at her new place! I didn’t take many pictures, but here are some scenes from the weekend.

Friday Routine

It’s FRIDAY peeps! I know a few weeks back I mentioned I want to try to enjoy little things throughout the week and not simply wait for the weekend; which I am trying to be better at, but I just love Friday’s. The funny thing is I don’t do anything exciting. I’ve actually had quite the little routine going for the past oh I don’t know…4 Friday’s in a row?

Lately, my boss has been letting me go early on Friday’s since we work so many events/overtime throughout the rest of the week or weekend work. As soon as she tells me to leave I hit up Starbuck’s and then the mall.

It’s nice to decompress from the week by myself with coffee and pretty clothes to look at. Usually, I don’t end up buying much. I know I could do this pretty much any day of the week, but I love knowing the week is behind me and I don’t have to do any prepping for the next work day, I can just relax! That’s probably such a lame Friday for most people my age, but I don’t care. Winking smile


As much as I love that routine, I’m switching it up this Friday and going to visit my sister in her new place for the first time! I’m so excited to check it out and see what her life has been like for the past week in her new home.

Moving Day

I have some upsetting news: my sister is no longer my roomie. She took a new job in Tampa requiring her to move out of our home. We have both been living at home (again) since we graduated college. For her, that was about 2 and a half years ago. For me, that was about 9 months ago. Living under the same roof again was so convenient and fun. Someone to go on a run with? Check. Someone to watch The Bachelor with? Check. Someone to laugh at mom and dad with? Check. Someone to borrow clothes from? Check. Someone to do just about everything with? Check. So you get the point, I’m going to miss her!!!

Since both attending college at UCF and living in the same city since then, I’ve gotten so used to having her close by. It’s weird to think for a full 2 years I was still in high school in PA and she was attending college here in Florida, that seems like forever ago. As much as I am going to miss her, I am so excited for her new start.

Fresh/new starts don’t happen that often, and to me, there is nothing more exciting. There is so much to look forward to: a new job to be awesome at, a new place to make your own, a new area to explore, and new friends to be made. It is obvious that getting to those exciting times is easier said than done. As much as it is exciting, it is also nerve-wracking and stressful. Kristin has spent the past month or so trying to decide if this job was the right one for her, and then once that decision was made, deciding where to live, what furniture she needs, etc. etc. As much as it would be nice to know for sure you are making the right decision, you really never will and many times if it feels right, you just have to take a leap of faith and I’m so happy Kristin did.

This past Friday was moving day. Unfortunately I couldn’t help because of work responsibilities, but I know I will be making lots of visits to Tampa in the future! Hopefully she will have a couch by then Winking smile. I’m so happy for her and thankful she is close enough to visit often.

What advice would you give to someone who is first out on their own? What do you look forward to most about a big chance, such as a move or new job?

WIOW: Planning Ahead

On Sunday, I updated the Let’s Work Out page on the blog. I kind of let that page slide and I want to bring it back. It’s a good way for me to keep track of what I’ve done over the weeks and see what things I may be lacking from my work outs.

I’m a serious planner in all aspects of my life, so it only makes sense that I should plan my work outs ahead of time, too. I didn’t plan exact work outs for the entire week, but just a general idea of what type of exercise I plan to do. So far I’m 3 days in and I have stuck to the work outs I laid out for myself.

I added some stretching and ab work into my work out routines this week, because I suck at doing these things. I always say I will, but it never happens. Writing it down usually makes a huge difference for me because I don’t feel at ease until I can cross it off the list. Feel free to send some good stretches my way! I could very easily just end up laying on the floor in front of the TV if I don’t have a plan Winking smile.
